So that's a sentence I never expected to say (or in this case, type). I have pretty much claimed total ignorance my entire life when it comes to cooking. Sure I can whip up a mean Noodle Roni, but that doesn't exactly count as "cooking". But it now seems, that after 10 years having been married to my ex (who loved to cook and was fantastic at it), and serving that time as his Sous-Chef, that apparently, I may have, well, just happened to learn a thing or two about cooking. In fact, I would even go so far as to say I enjoy it (in moderation of course...like once a month, maybe.)
So today was that one time a month and I went all out. Invited some family over and made an awesome black-bean pumpkin chili in the crock pot, complete with fresh...err, well fresh frozen anyway...tomatoes and a bunch of other ingredients that I actually had to chop, dice, stir and measure. My cookery did not end there, however, I also whipped up a mean foccacia bread, a homemade vanilla cake with white chocolate frosting and homemade, fresh, Ben & Jerry's recipe, raspberry ice cream. I know, you're jealous. It was amazing and it all turned out exactly as I imagined.
I've even found that in addition to eating the result (which of course is always the best part), I really enjoy the planning that goes into a meal. The "What do I need to get the night before? What can I make ahead? If I put this in at this time then I can do this other thing while its cooking and everything will be ready at 5!" Yeah, there is something very satisfying about the process. Like a mini project plan that you can create, execute and complete all over the course of a couple days.
So, anyway, who knew? I like to cook. Seriously. Wow.
My Story
I am deeply interested in religion, politics, current events, history, musical theater and books! I left the LDS church a couple years ago and have spent a lot of time since then thinking and considering various religious influences in my life and in the lives of those around me. For more information on why I left the LDS church, look here. I also love to sing, act, dance (tap preferably) and perform on stage whenever possible.

Hot Pocket!
You have to sing the title in a Jim Gaffigan kind of way to really appreciate this.
This is most likely the best contest ever!
Mmmm, what could I do with a year's supply of Hot Pockets? Well I certainly wouldn't eat them , if that is what you are thinking...I'm not that crazy!

Enjoying the Journey
So, lately I have been thinking a lot about how I live my life and how I tend to always look forward to the fun stuff and begrudge the not-so-fun stuff. The typical, "I wish it were the weekend", or "I can't wait for vacation", or "If I can just get through work today, then tonight will be awesome!" That kind of thinking. However, when I stop and think about it, I really don't want to live my life waiting for the next fun thing. I want to be able to enjoy everything, the good and the bad, the easy and hard, the boring and exciting. So lately I have really been trying to enjoy the journey of my life. To think instead, "I am excited for this one thing but look at all the things I get to experience between now and then. How cool is that?"
Today happened to be one of those "I'm looking forward to the day" days but it didn't come without it's fair share of varied life experiences to keep me on my toes. Here's what today's journey involved:
Today happened to be one of those "I'm looking forward to the day" days but it didn't come without it's fair share of varied life experiences to keep me on my toes. Here's what today's journey involved:
- Running back to my apartment after being at work for a mere 45 minutes to do a very quick clean so a potential renter could see my apartment. Then returning to work all sweaty and smelling like Glass Plus.
- Finding out that my closing costs were $1000 more than I was expecting exactly 30 minutes before I was to sign the papers and hand over the check.
- A lovely lunch and a chance to decompress with one of my favorite people.
- Working until 9:30pm (since I only had 3 hours combined as of 4 pm)
- Slicing my thumb on the top of a soup can as I attempted to prepare dinner at 10pm.

A Life That Resembles Me
I don't want to be married anymore. The above is a quote from the book "Eat, Pray, Love" by Elizabeth Gilbert. The first few chapters read like a biography of my life for the last couple years. I could relate 100% to the last line. It's weird how we can take one step after another in life only to find that after all those steps, our life doesn't even resemble who we really are.
In daylight hours, I refused that thought, but at night it would consume me. What a catastrophe. How could I be such a criminal jerk as to proceed this deep into a marriage, only to leave it? We'd only just bought this house a year ago. Hadn't I wanted this nice house? Hadn't I loved it? ....Wasn't I proud of all we'd accumulated?... I had actively participated in every moment of the creation of this life - so why did I feel like none of it resembled me?
All the crazy changes I have gone through over the last couple years have really helped me create a life that, now, does resemble me. I love where I am at now. I love that I can walk to work. I love that I have an exposed brick wall, on purpose! (name the musical!) I love that my apartment is now decorated. This may not seem like a big deal to some of you, but we lived in our house for 6 years and never hung a single item on the wall. So yeah, its a huge deal. I even found some great city pictures for the bathroom. I went all out. Anyway, here are a couple pictures of what I have ended up with.
My aunt gave me the picture in the center during my run of "Guys and Dolls" where I was playing Sarah. It is one side of what was a reel cover. (Like a record cover but it actually encased the movie reel). The street sign photo on the left was bought on a recent trip to New York and the rest of the frames are filled in with various other New York city photos.

Freaky
After putting in my order at the local sandwich shop today, they call out "Jan" to let me know my order is ready. Me and another woman step to the counter...Apparently I am not the only Jan ordering a sandwich which is actually pretty unusual...I mean you may think Jan is a somewhat common name, but it's no Michael or Jennifer, for sure. Stranger, tho, was that we had both ordered half an egg salad on wheat. Yeah, I know, freaky, right? I think I ended up with her sandwich...Hopefully she is not upset when she finds salt and pepper added to hers! Oops!

Christmas Rant
Ok, I'm a grinch. I don't try to hide it. I have absolutely zero Christmas decorations at my place and I try to take the bare minimum approach to everything Christmas. I have attempted to listen to Christmas music once or twice, but get so annoyed by the cheesy versions of Shirley Temple singing "Nuttin for Christmas" that I am forced to turn it off, or wish I could turn it off...really if I am paying dearly for a meal at a fine dining restaraunt, should I really be forced to listen to that? Really?!! Might not a symphonic recording of Christmas music be slightly more appropriate for such a place? Is it really that hard to find decent not-so-annoying Christmas music? IS IT?!!! But I digress...
So thats reason one I guess...the music...Not the good & new music, no, I'm talking about the annoying versions of the same old tunes I have heard since I was three years old. They were great when I was three, but yeah, 30 years later, please, just someone make it stop.
Next, I hate the expectations of Christmas. I hate that people expect that you just must get all excited about Christmas the day after thanksgiving and that if you don't then you are somehow anti-Jesus and deserve nothing but a huge lump of coal in your stocking. Is it really necessary to entertain the same level of enthusiasim for a holiday that I had when I was five? Why is it not OK to reserve my excitement for a few days before...you know, for the days when all the stress of the holiday (figuring out what to get people, shopping, wrapping) is over with and I can can actually enjoy it (giving, enjoying time with family, time off work, etc).
Which brings me to my next reason...Buying presents. I love getting that perfect present ready and put together for that perfect person and giving it to them in that perfectly magical Christmas moment...Well, as long as I have a really great idea that I am certain that person will like. But honestly, how often does that happen? Maybe one gift out of 10? Maybe one year out of three? So, for the rest of the people that are on your list you are scrambling...thinking of what you could possibly get this person that you really don't know very well or that person who already has everything, or this other person who you know will be getting a stellar gift from someone else and you want yours to be at least comparable to that one. So you end up heading to Wal-Mart at the last moment, rummaging through one picked over isle after another looking for a gift that will probably just be regifted anyway and end up with...*Drumroll please* The All-in-one fruitcake maker!!!! Now really, who wouldn't want that?
So, to all of you little Who's out there...please just head back to the suburbs (and quit taking up all the metered parking downtown! Me and my CNG car are supposed to have free metered parking, not you! Ok, now I'm kidding...well...sort of ;-) and have yourself a merry little Christmas...Just let me enjoy mine on my own terms. Curled up with a blanket, some hot chocolate, a cookie and a book listening to the Christmas bells echoing through the windows from the church on the corner.

Perhaps a sticky bun, or four?
So, as if it isn't bad enough that I currently live about a block away from the best cookies ever, today I managed to fall upon the most amazing bakery/pastry shop and it's only a block and a half away from my work. I'm ruined, I tell you! RUINED! This bakery has everything...every amazing dessert you can imagine and they are all just waiting for me. Creme Brulee, Marzipon cake, cookies, pastries, chocolates...everything. Anyone that knows me, already knows that I have a serious dessert addiction...I'm the person who wants to see the dessert menu first so that I can plan accordingly for the rest of the meal...the one who bases the quality of a restaraunt on the quality of their dessert. And now, there are 50+ desserts calling to me, a block and a half away from the place where I spend the majority of my days, patiently waiting their turn as I unsuccessfully attempt to fight my inner sugar demon....Did I mention I'm ruined?

What I Learned On My Vacation
1. It is possible to fly in an airplane without completely freaking out. (Possible, yes, but not guaranteed!)
2. Leaving your camera at home is not always a bad thing if it gives you an excuse to get that new camera you've been wanting for a long time. Check it out!

3. Georgia is a very romantic looking place. Lots of whitewashed bridges spanning immaculate ponds/lakes in front of large plantation-like houses.

4. Southern food is YUMMY!
5. Lodging in Disney World is way overpriced, but still worth it to be so close to all the resorts.
6. Don't wait to buy that perfect souvenier...Chances are there will be no convenient time to return when you finally decide you really do want it!
7. An extra pair of flip flops in the back pack may just make the difference between
walking the next day and being forced to tool around on a grandma Disney scooter. (Trust me, not cool.)
8. When visiting Disney World, the Deluxe Meal Plan is a MUST! Fine dining every night...Awesome!
9. Waiting in line is not very fun even at the happiest place on earth.
10. I never want to be an astronaut. 'Nuff said.
11. I still think it would be fun to dance/sing/whatever for Disney.
12. Space Mountain is not as cool as it once was, but Pirates of the Caribbean is better than ever!
13. "Off-season" and "Disney World" are oxymoron's. Less crowded is still crazy crowded.
14. The "fast-pass" is a good idea in theory but does not always work out like you hope.
15. Biking on the beach is fun, but a lot more work than it looks!
16. Beach sunsets are spectacular.

17. Jellyfish are scary.
18. Waffle House waffles are A-MAY-ZING!
19. When in high places, it can be nice to have friends in low places.
20. Not being able to access a computer for 8 days is a problem!
21. It's always nice to come home.

Tis the Season...
...for Starbucks Hot Chocolate! Mmmm. Seriously. So. Good. Of course, I've been drinking it through the summer months as well (I mean, just because its warm, doesn't mean I should go without this tasty treat for 3+ months!) but it is really made that much better when there is a slight chill in the air. Which, although off topic, also serves as a reminder that snowboarding season is just around the corner! Ordered my Snowbird pass yesterday! Can't wait!
